Cocktail of The Week – The Old Fashioned (Niner Ichi Nana is now open)

As some of you may know, I’ve been busy opening two new establishments here in the Philippines. I know this doesn”t give me the right to post less but the stress has been incredible pre-opening and i just had to focus all my energy on one thing. It is now Sunday, I’ve slept, rested and feel ready for another beautifully hectic week.

The Hungry Hound is a Pub + Kitchen we opened that is still currently on soft opening, as the restaurant progresses i will give you updates on how it’s doing and the type of food you can expect to eat.

Niner Ichi Nana, is the craft cocktail bar i opened right next to it, just last Friday (6/9/13). It is a space of pure unadulterated enthusiasm for people who appreciate well proportioned, mixed and creative drinks. We have undergone extensive training and it’s showing quite well. It is a seating only bar where one can simply stroll in on a lonely afternoon at 5pm, strike up a conversation with our great bartenders or myself and have them make something bespoke for you or have your pick at our hand crafted cocktails (currently 14 strong, eventually 28 strong). It is a place of expression, conversation, fun and worry free good times.

The First cocktail i want to feature is an Old Fashioned, because as i’ve explained in the past, if you need to know how to make one drink, this should be the one. It’s a liquor forward sip, meaning that you taste the bourbon that is inside and it is served with a big ice sphere to keep dilution to a minimum.

We stray from convention by including a cherry in our ice ball and opting for simple syrup instead of muddling fine sugar.

A classic combination of bitters, water and spirits.

Put some big ice in a Yarai mixing glass, add in 2 dashes of Angostura Bitters, take a bar spoon and twirl it around a little to force the cold to propogate and start a little dilution. Add in your simple syrup (15ml), mix again. Add your 45ml of bourbon (wild turkey works or a good rye whisky). Serve with a large square ice cube or a big sphere like we do and an orange strap.

Enjoy, close your eyes and concentrate on nothing else but the burning yet soothing sensation in your mouth.

Nothing more seductive that an Old Fashioned.

      CONGRATULATIONS!!!! to your niner ichi nana … i hope i can go to your resto and chill at niner ichi nana but i can’t cuz i’m far from there hehe… but i hope i can go there in manila…if the time comes can’t wait to visit your newest venture…kodos to you kuya erwan :)) xoxo

      me and a group of friends plan to go this friday… is it a packed day? do you suggest we make reservations? and also since its somewhat of a birthday celebration do you also serve food at Niner Ichi Nana? so as to avoid the hassle of moving from a resto to ur place?

I gained weight because of a sedentary lifestyle and overly indulging in foods I knew were bad for me, eating out too often, taking the easy route (microwavable dishes) and not caring what went in my body, before I knew it reached 240 lbs. I lost weight through pure dedication, tireless hours of hard work and yes, food.
