Holiday Recipe 2: Beet, Orange, Squash and Carrot Fall Salad with an Orange Vinaigrette

Just because it doesn’t get colder locally doesn’t mean we are not supposed to use “fall” like ingredients to get into the spirits of things. I’ve always and forever associated the colours purple and orange with this time of year, maybe it’s from successful marketing campaigns pushed by large corporations or just a personal preference, but when i say squash, carrots and beats, i think thanksgiving and christmas.

If you are wondering, no, i am in no way American and i don’t really have close American friends, so you might find it strange that i’m posting about Thanksgiving. Well, firstly, i want the reach of the blog to be as global as possible and secondly, any excuse to get family and friends around the table and hear about what everyone is thankful for is a welcome respite from the daily rat race we deal with.

Personally, if i could make it, thanksgiving would be a monthly or even weekly occurrence.

about THE FAT KID

I gained weight because of a sedentary lifestyle and overly indulging in foods I knew were bad for me, eating out too often, taking the easy route (microwavable dishes) and not caring what went in my body, before I knew it reached 240 lbs.
