I’ve always loved Singaporean food. Singapore, being a modern melting pot of cultures, is where I get to try various ingredients in food and drinks. In fact, it’s where I first encountered pearl barley, freshly made into a cold sweet drink that can be bought from the hawker center.

I’ve always loved Singaporean food.  Singapore, being a modern melting pot of cultures, is where I get to try various ingredients in food and drinks.  In fact, it’s where I first encountered pearl barley, freshly made into a cold sweet drink that can be bought from the hawker center. It’s also often used as a substitute for arborio rice in the risotto that I would cook in the kitchen of a fine dine restaurant where I used to work.

Recently I just came back from a short trip in Singapore and I managed to buy some pearl barley & dried lap cheong (fatty pork Chinese sausage). Since I had my fill of the barley drink that I terribly miss, I decided to cook the pearl barley that I have as risotto again but with more Asian flavours.

Pearl barley is an excellent substitute for rice in this recipe as it is delicate and nutty in flavour and yields firm yet creamy in texture once cooked. In this dish, the lap cheong and shiitake mushrooms impart rich flavours. It is so easy to make as you only need one pot and 5-ingredients to cook this. Perfect for lazy nights when you just want to kick back, relax and eat a comforting dish.
