We all love potatoes. They’re amazing in any shape or form. The best part is that it only takes a little to turn a potato from meh to straight up delicious.

Mashed
Ingredients:
- 6 starchy potatoes
- 1 cup milk
- 4 cloves smashed garlic
- 1 stick butter salt to taste
Instructions:
- Submerge the potatoes in a pot of cold water. Add a few teaspoons of salt and bring to a boil. Let it bubble for about 15-20 minutes until tender.
- In a separate pot, add milk and bring to a low simmer. Add in garlic. Continue to simmer for 10 minutes.
- Strain the potatoes and let it cool to room temperature before peeling.
- Mash until big lumps disappear. Add in the butter and mix until well incorporated.
- Pass through a strainer to remove remaining clumps. Add in the milk and fold in until smooth. Drizzle with melted butter.
Rosti
Ingredients:
- 4 starchy potatoes
- 1 tbsp butter
- 1 tbsp duck fat
- salt and pepper to taste
- Optional: cheese and bacon/salmon and sour cream to pair
Instructions:
- Parboil the potatoes for 6-10 minutes until it softens. Rest for 2 hours.
- Grate the potatoes and season with salt and pepper.
- In a pan over medium heat, melt butter and duck fat. Fry the potatoes for 3 minutes and begin to form into a circle. Cook for 10 minutes until the bottom is golden brown.
- Use a plate to catch the rosti as you flip it, uncooked side down.
- Add more butter and duck fat into the pan, then cook the other side of the rosti.
- Have it plain or top it off with cheese.
Gratin Dauphinois
Ingredients:
- 7 waxy potatoes
- 500ml milk
- 500ml cream
- 6 cloves garlic
- salt and pepper to taste
- 1 tsp nutmeg
- Optional: gruyere cheese
Instructions:
- Thinly slice the potatoes, around 4mm.
- In a pot, combine milk, cream, salt, nutmeg, garlic, and pepper. Bring to a simmer. Add in potatoes and cook for 10 minutes, stirring occasionally.
- Remove the potatoes and lay them flat on a baking dish. Drizzle with the cream mixture.
- Place in the oven at 175C for 20 minutes or until golden brown. Rest for 20 minutes before serving.
Smashed
Ingredients:
- Roast style potatoes (12 pcs for this recipe)
- 2 tbsp olive oil
- 2 cloves garlic
- salt and pepper to taste
- 2 tbsp sour cream
- Garnish: parmesan cheese, parsley, extra virgin olive oil
Instructions:
- Place potatoes (skin on) in a pot of cold water. Add in a few tablespoons of salt until the water is salty. Bring to a boil and cook for 10 minutes until tender, but not falling apart. Drain to remove excess moisture.
- With a flat utensil, smash the potatoes until flat but still intact. Air dry for 1 hour.
- In a pan over medium heat, pan fry the potatoes until golden brown. Add smashed garlic into the oil as it cooks.
- Spread a layer of sour cream on a plate and arrange the smashed potatoes on top. Garnish with salt and pepper, cheese, parsley, and drizzle with olive oil.
Roast
Ingredients:
- 4 pcs medium potatoes
- 1/2 tsp baking soda
- 1/3 cup duck fat
- 4 cloves garlic
Instructions:
- Peel the potatoes and chop into bite-sized pieces.
- In a pot of boiling water, add in 1/2 teaspoon of baking soda. Once dissolved, add in the potatoes and parboil until tender. Drain and puff up potatoes for 1 hour in a sieve.
- In a separate pan, infuse duck fat with minced garlic. Set aside.
- In a big pot, pour in the infused duck fat and add in the potatoes. Mix until the potatoes are coated, and add salt to taste.
- Lay out the potatoes evenly in a baking tray and bake at 200C. Flip the potatoes after 20 minutes and continue to bake until golden brown.
Skins
Ingredients:
- 2 tbsp olive oil
- Leftover potato skins
- salt to taste
- Optional: any type of herb or cheese you like
Instructions:
- Pat dry the potato skins and spread them out on a baking tray.
- Toss in some olive oil, duck fat, and salt. Add in herbs or cheese (optional).
- Bake in an oven for 30 minutes at 200C.
Baked
Ingredients:
- 2 pcs potatoes
- 1 tbsp olive oil
- salt and pepper to taste
- 1 tsp butter
- Optional: sour cream and fish roe
Instructions:
- Preheat oven to 175C.
- Prick the potatoes all over with a fork and rub in olive oil, salt, and pepper.
- Place them on a roasting rack and bake for 1 hour. Flip after 30 minutes.
- Optional: split in half, top off with melted butter and garnish with your favorite cheese, sour cream, and toppings.
