A red light usually means to stop but at Bait’s Seafood Restaurant at The Red Light, it just means all the delightful seafood you can eat.

Currently featuring Bait’s Seafood Restaurant that is headed by Chef Joseph Margate (an Elven Madison Park alum and former Executive Chef at Liberty Boston Hotel’s restaurant, Clink), The Red Light was once an abandoned garage in a random building that was turned into creative culinary space where good conversation is only whitewashed by the exceptional seafood spread.

Bait’s has a creative menu that highlights Chef Joseph’s love affair with seafood and sauces using French-Mediterranean to Latin American and Asian innovation and includes Fresh Pasta Bottarga with Broccoli and Bread Crumbs, Squid ala Plancha with Sofrito and Chicharron, and Grilled Prawns with red cooked trotters and scallions, among others. Paired with specially concocted cocktails made by myself, Bait’s at the Red Light is a pop-up definitely worth catching.

Bait’s Seafood Restaurant will be available at The Red Light from January 6-16 2015, before opening its own place in Salcedo. Reserve a table at The Red Light and be one of the first to experience the finest seafood at Bait’s the hippest culinary hangouts in Manila!
