Bistek Tagalog is one of my favourite Filipino dishes. Its bursting with umami flavours and has a rich onion sauce to slather the beef with. Eaten with perfectly cooked white rice, it really just ties everything together as it should be.
Here is my version of the dish with some added onion leeks and bone marrow to bring in new levels of taste to the dish. I also opted for beef tenderloin and bringing it to medium, instead of just using random cuts of meat and cooking them through as done locally most of the time.
