On a trip to a farmer’s market near my village, I was inspired by the fresh and local produce. I was lucky enough to find these small and juicy morsels (blueberries) of goodness. They were exquisite. It might be shallow and a bit melodramatic but as you know, finding cheap, fresh and local blueberries are hard to come by here in the Philippines.

The next day, I knew I had to make pancakes. I was secretly going to reach for boxed pancake mixes and sprinkle in the blueberries. I stopped myself because I just didn’t have the heart to do that to such a fresh ingredient. I’m not ashamed to admit that I don’t always make pancakes from scratch but this time, I’m so glad I did!

Not only to honor my market find but also because I knew exactly what the ingredients were, it was easy and more importantly it was really good and fluffy! Fluffier and yummier than the boxed mixes, by a mile.
