Still in Mount Batulao doing some Bushwack Cooking – a new series where I go up mountains and cook up stuff with limited pantry ingredients and equipment.

This time I make a comforting favorite, Macaroni and Cheese. But I’m mixing it up by using coconut milk. Really quick to make, it should be up there with s’mores on the list of camping treats.

Just prepare your macaroni pasta in salted boiling water until al dente (see packaging information for timing).

Get a hot pan going, add 1 tbsp of olive oil, 2 garlic crushed, just to flavour the oil slightly. Add about 2 tbsp of flour and toast a little. Add in 1/2 cup of coconut milk. 1/2 cup grated emmental, 1/2 cup cheddar cheese, 2 tbsp of dried oregano and some cracked black pepper. Stir on medium until its all incorporated.

Combine the cheese with the drained pasta. Done!
