Hearty, spicy, and filling: we all love a good bowl of chili con carne. It’s one of the best comfort foods out there. You can eat it wrapped up in a warm blanket while binge-watching the latest series, or you can serve it up with a group of friends for the next party. For a party of one or a party with friends, chili con carne is always a good idea.

What to eat with chili

Chili con carne is already great on its own, but it also goes great with many side dishes. Have it over rice, baked potatoes, corn chips, or hotdog sandwiches. You can also use it as filling for a chili cheese burrito.

Chili Con Carne Recipe

Here’s my recipe for making chili con carne. It’s hearty, full of flavor, and guaranteed to satisfy. Chili con carne is one of those recipes that’s perfect to make a week ahead in big batches. Just pull it out of the fridge and you have a meal throughout the week. It will actually taste better over time because the flavors have time to develop.

Ingredients:

  • 1/4 kg beef
  • olive oil to cook
  • 1/2 cup smoked bacon (pancetta and the likes work as well), chopped
  • 2 pcs italian sausage, chopped
  • 4 tbsps garlic minced
  • 1 large onion minced
  • 1 tbsp onion powder
  • 2 tsp sazon tropical
  • 2 tsp coriander powder
  • 1 tsp nutmeg
  • 1 tsp dried sage
  • 3 tsp pimenton
  • 3 tbsp tomato paste
  • 1 tbsp horseradish
  • 1/4 cup chopped parsley
  • 1 can kidney beans, drained
  • 1/2 can crushed tomatoes
  • 1 small piece dark chocolate
  • black pepper and salt to taste
  • 1 cup beef stock

Garnish:

  • sour cream
  • cheddar cheese
  • lemon
  • green onion

Instructions:

1. Cook beef on medium heat until brown. Once brown, add in garlic and onions.
2. In a separate pan, cook together smoked bacon and italian sausage.
3. Season beef with onion powder, sazon tropical, coriander powder, nutmeg, dried sage, and pimenton. Add tomato paste.
4. Combine bacon and sausage mixture with the beef. Add horseradish and parsley.
5. Transfer to a pot and add crushed tomatoes, dark chocolate, and beef stock. Season with black pepper.
6. Let simmer 1 hour.
7. To plate, add chili in a bowl. Top with sour cream, grated cheese, green onions, and sliced lemon.

Solenn’s Chili Con Carne Recipe

Ingredients:

  • 1/4 kg beef
  • canola oil to cook
  • 1/2 cup picnic bacon
  • 2 pcs chorizo, chopped
  • 4 tbsps garlic, minced
  • 1 large onion, minced
  • 2 tbsp of mustard
  • 1/2 tbsp paprika
  • 1/2 tbsp cumin
  • 1/2 tbsp garlic powder
  • 1/2 tbsp cinnamon
  • 1 can kidney beans, drained
  • 1 small can of corn drained
  • 1/2 can stewed tomatoes
  • 3 tbsp shaved dark chocolate
  • black pepper and salt to taste to taste
  • 1 cup beef stock

Garnish:

  • sour cream
  • cheddar cheese
  • lemon
  • cilantro

Instructions:

  1. Sauté the onion and garlic in a pot with canola oil.
  2. Add in ground beef and cook until the water evaporates.
  3. Add in french mustard, spanish paprika, cumin, garlic powder, and cinnamon.
  4. Pour in stewed tomatoes and beef stock.
  5. Let simmer until mixture thickens.
  6. In a separate pan, cook chorizo and bacon. Add mustard.
  7. In the same pan, add the kidney beans and corn.
  8. Combine the chorizo and bacon in the pot.
  9. Add in shaved chocolate and continue to simmer until thick.
  10. For plating: Top with sour cream, grated cheddar cheese, lemon, and chopped cilantro.
