Chori Smash Burger Recipe [Chorizo Burger]

What do you look for in a perfect burger? For me, it’s the lightly toasted brioche buns. The seared patty with crispy edges. The melty cheese. And of course, the perfect sauce to wrap it all up.

We’re looking at the smash burger, where the patty is quite literally “smashed” into a thin burger. It’s cooked over a griddle until it forms charred bits and edges, resulting in amazing flavor. They usually come in double (or triple) perfectly seared beef patties layered with cheese oozing down the sides. You don’t get this with a regular burger.

You can make a smash burger with regular ground beef, but for this recipe we’ll also be using chorizo. The flavor and spices from the chorizo takes this smash burger up a few notches.

Smash Burger Recipe

Ingredients
  • 150g ground beef
  • 1 brioche bun, toasted and buttered
  • 100gr rib eye, minced
  • iceberg lettuce, thinly sliced
  • red onion, thinly sliced
  • mayonnaise
  • melted butter
  • American sliced cheese

Makes 2 patties

Instructions
  1. Prep your lettuce, onion, and brioche bun. Combine minced rib eye and ground beef into a loose ball, not tightly packed. Season with salt. These will make 2 patties.
  2. Place the patties over a hot griddle. Use a weight to press on the patties until it’s flat on the griddle. Sear on one side. Once you see the top is almost cooked, flip. Continue to sear for 1 minute before adding the cheese. Place the second patty over the cheese and continue to cook until the cheese is completely melted.
  3. Assemble by spreading mayo on both buns, topping off with a few slices of onions, a handful of lettuce, and patty. Seal with the top bun and serve.

Chori Burger Recipe

Ingredients
  • 1 brioche bun, toasted and buttered
  • melted butter
  • 1 chorizo, minced
  • 150g ground pork
  • 1/2 red onion
  • 1/2 tbsp atchara
  • 1/2 tbsp chiu chow sauce
  • 1 tbsp mayonnaise
  • 1 tbsp plum sauce
  • 1 tbsp ketchup
  • american sliced cheese
Instructions
  1. Peel and mince chorizo. Combine with ground pork and form into a loose ball. Makes two patties.
  2. Prepare the sauce by combining mayonnaise, ketchup, plum sauce, and chiu chow sauce (click here for the recipe).
  3. Place the patties over a hot griddle. Use a weight to press on the patties until it’s flat on the griddle. Sear on one side. Once you see the top is almost cooked, flip. Continue to sear for 1 minute before adding the cheese. Place the second patty over the cheese and continue to cook until the cheese is completely melted.
  4. Assemble by spreading sauce on both buns, topped off with atchara (click here for the recipe), lettuce, and patties. Seal with the top bun and serve.
