A lot of us grew up with corned beef cooked in a particular way: fried, with crisp rings of onions on top. Some might throw in potatoes if they’re feeling a bit special. Serve it with rice and we’re all set.

That’s our go-to for an easy meal, but have you ever wondered if there are other ways to serve corned beef? For these recipes, I tried to elevate canned corned beef into tasty but easy dishes you can make at home. They only take minutes to make, too.

Kimchi Fried Rice

Kimchi fried rice is a type of Korean fried rice, usually made with kimchi (obviously), carrots, enoki mushrooms, and other vegetables. It can be paired with any kind of protein, so for this recipe I’ve tried it with corned beef. You’d be surprised to find that corned beef with kimchi rice make perfect sense.

Ingredients:

  • 1 can Purefoods corned beef
  • 4 cloves garlic, minced
  • 1/3 cup spring onions (white end), finely chopped
  • 1 cup kimchi, chopped + juice
  • 2 tsp gochujang
  • 1/2 tsp sugar
  • 1/4 tsp chili flakes
  • 2 tbsp sesame oil
  • 2 cups rice
  • 2 tsp sesame seeds
  • 1 egg
  • 1 tbsp spring onions (green ends), chopped
  • dried seaweed, chopped

Instructions:

  1. Fry corned beef in a pan until crispy.
  2. In a separate pan, cook garlic, white spring onions, and kimchi.
  3. Add in gochujang, sugar, chili flakes, and sesame oil.
  4. Add in rice and mix until well combined. Top with sesame seeds.
  5. To garnish: Top with fried egg, corned beef, green spring onion, and dried seaweed.

 

Onion Rings

Think of onion rings, but take it up 100 notches. These onion rings are filled with juicy corned beef, filled with cheddar cheese. Now those are the ultimate onion rings.

Ingredients:

  • 1 can Purefoods corned beef
  • 3 large white onion (keep the big rings)
  • 6 cubes cheddar cheese
  • 2 eggs
  • 2 cups flour
  • 2 cups bread crumbs (or panko)
  • frying oil

Instructions:

  1. Fry corned beef in a pan until cooked, but not dry.
  2. Chop onion on both ends, keeping the middle intact (around an inch and a half thick). Remove the core.
  3. Fill onion halfway with corned beef and add in the cheddar cheese.
  4. Fill onions to the brim with the remaining corned beef.
  5. Lightly coat the onion rings in flour.
  6. Dip into the egg wash.
  7. Coat with bread crumbs.
  8. Heat oil in a deep pot/deep fryer to 175°C. Once ready, place onion rings. Fry until golden brown.

Good for 6 people.
