Came across this grocery that was selling different types of avocadoes that week. Bought one too many and I had to think of something to cook them with before they become over-ripe. I’m all for quick, simple and easy cooking so I thought making hasselback-style chicken for the weekend would be a great way to make use of my extra avocado. Great bonus is that this recipe uses lean meat and power-packed with flavour, iron and good fat that’s great for the heart.
I live for cheese so I’ve sprinkled some on top to round up the taste but if you prefer to make this dish healthier, cutting back the cheese would be fine. After baking, complete by serving some salad & wild rice on the side. Bon appetit!
