If you’ve grown up in the Philippines, then you’re probably familiar with Pancake House. As a kid, I would often bug my parents to take me there. Their classic offerings include pancakes with bacon and eggs, crunchy fried chicken, and spaghetti. But the pièce de résistance would have to be their Tacos.
Pancake House tacos seem simple enough: layers of minced meat, tomatoes, lettuce, and cheese all cozy in a bubbly hard taco shell. But what makes it so good? I take it back to my kitchen studio to recreate it. Watch it all go down in my video below!
Ingredients for the minced meat:
Flour tortillas, cut into desired size
1 clove of garlic, minced

For the salsa:

What do you guys think? Can you hack the Pancake House taco at home? Try it out yourselves and let me know how it goes. Tag your photos with #thefatkidinside on Twitter or Instagram so I can see them!
