This is one of those recipes that you should keep in your back pocket. You know, those days when you just want something indulgent but don’t want to sacrifice all the hard work you’ve been clocking in the gym. I love that this recipe does NOT contain flour, eggs, cream, butter and sugar! Most of all, it’s easy to make!

Healthy Ice Cream Sandwich
Yield: 4 Ice Cream Sandwiches

Ingredients:

For the cookies:
1 medium banana, mashed
1 cup rolled oats
½ cup walnuts, roughly chopped
½ cup dark chocolate chips
1 Tbsp. coconut oil
1 Tbsp. Flax seed meal
2 Tbsp. raw honey
1/4 tsp. cinnamon, ground
Pinch of salt

For the Nana Ice Cream:
4 frozen (ripe) bananas
1 tsp. Vanilla extract

Instructions

For the cookies:
Preheat oven to 350 degrees farenheit.
Place the mashed banana, rolled oats, coconut oil, honey, walnuts, dark chocolate chips, cinnamon and salt in a bowl.
Mix thoroughly and leave for 10-15 minutes.
In a baking pan lined with parchment paper, use an ice cream scooper to portion out the oat mixture. Drop on lined baking pans and flatten a little.
Bake in the oven for 15-18 mins.
Let cool and set aside.

For the Nana Ice Cream:
Place all Nana ice cream ingredients in a blender and puree until smooth and looks like ice cream.

Scoop out the Nana ice cream and place onto an inverted cookie and top with another cookie.
Serve right away or freeze.
