This week’s recipe is a very easy and simple Asian Meatball Sub Sandwich.
This is probably one of the laziest and easiest recipes out there.
For your meatballs, mix about 500g of Lean ground pork and 500g of Lean ground beef, season with salt and pepper and about 6 tbsp of red curry paste. This should yield about 8 meatballs.
Sear them in a pan at medium heat with some grapeseed oil until a nice brow crust forms on one side (5mins), flip the balls, reduce the heat to medium low and cook down until cooked through.
For the sauce: Take 4 tomatoes, cut them in eights, fry them off in a pan with some garlic and olive oil, deglaze with 1/2 cup of white wine and stew down slowly. Throw in some chopped basil leaves and season with salt and pepper.
Take a piece of bread, ciabatta in this case, cut in two and grate lots of cheddar on top of the two pieces with some extra virgin olive oil. Toast in the oven, until melted, bubbly and delicious.
Take you bread, place the meatballs on one piece, cover with sauce, top, close, eat, close, eyes, sigh, say “i love me” and go to bed.
