As the temperature rises, I know that summer is already here. It becomes unbearable to cook inside the kitchen that’s why I enjoy cookouts the most. Cooking becomes relaxed as I would just prepare the meat beforehand and it goes straight to the grill during our next barbecue party.
The protein I love grilling the most is chicken thighs as it is very versatile, remains moist and soaks up the flavours of the marinade very well. Lately, I have been experimenting on tropical fruits, my home-grown herbs and spices for the marinade. This easy grilled chicken recipe has a gorgeous bright caramelised flavour due to the pineapple jam and a bit of heat from the Sriracha sauce. Complete this dish by serving a nice garden salad or fresh cold coleslaw.
