Here’s a recipe I picked up while working in far eastern Siberia. Yes, it’s as far and as cold as it sounds.

An ode to my days in Russia, this beef stroganoff is quick and easy and is perfect for days when you just want to cozy up indoors. Just cut up some garlic, onions, mushrooms (I used white button and brown mushrooms), cornichons (small cucumbers), and leeks and saute away.

For the beef, I used sirloin and strip loin cut into cubes and seasoned with salt and paprika. Sear until done to your liking. Combine with the sauteed veggies, add yogurt, a little milk and let thicken. Plate and garnish!
