Socca is a traditional thin pancake or crepe made from chickpea flour. There are a dozen ways to make it, but here’s my take on it. And good news to my vegan friends, socca is naturally gluten-free and vegan and is a great vehicle for many kinds of food.
Here, I make fish tacos with it topped with avocados, cilantro, and sour cream. That’s good eating.
