Mari‘s back with us and she’s sharing with us another healthy recipe–Summer Orzo Salad. Orzo is a short-cut pasta that’s shaped like a long grain of rice. It’s great in soups and salads just like this one! If you haven’t tried orzo yet, you definitely should!

This salad is quick and packed with lots of different veggies that are good for you. And because we’re using orzo, it’s filling enough to eat as a meal in itself. Great as a light lunch or dinner option. Try it!
