Here’s a cool recipe for a healthy and filling salad, good for 3-4 people. Best thing about it is it’s under Php400.
So I was challenged to make a healthy snack/lunch for 3-4 people under Php400.
Challenge accepted!
I made this cool Falafel, lentil, beet, and watermelon salad that’s as filling as it is healthy.
Ingredients
Falafel
– 2 cans of chickpeas
-coriander
-2 eggs
-salt
-pepper
-EVOO
-1 tsp allspice
-1 tsp cinnamon
-1 tsp cayenne
-1 tsp white pepper
-2 tsps baking powder
– 1/3 c flour
Salad
– 1 c cherry tomatoes
– 2 cups cubed watermelon
– 1 c cubed cooked beets
– parsely
– 1 c cubed cucumber
– EVOO
– salt
– pepper
– juice of 1 lemon
– 1 can of lentils
Pulse together all the falafel ingredients in a food processor. Form into patties, fry, and set aside.
Toss together all the salad ingredients. Spoon onto a plate and top with falafel patty. Garnish with crumbled feta and drizzled olive oil.
