Weird Recipes with Mayo That Actually Work

Banana Bread
Ingredients:
- Banana bread
- 3 overripe bananas
- 1/2 cup mayo
- 1 egg
- 1 pinch of salt
- 3/4 cup sugar
- 1 1/2 cup flour
- 1 tsp baking soda
- 1/2 cup chopped pecan, coarsely chopped
Instructions:
- Mash bananas into a paste. Combine with mayonnaise and egg. Add salt, sugar, baking soda, and flour.
- Roughly chop pecans and combine into the mixture.
- Grease baking mold and pour in batter. Bake for 60-75 minutes at 150°C.
Deep-Fried Pork Belly Adobo with Adobo Mayo Sauce
Ingredients:
- 4 pcs pork belly
- 1/2 cup soy sauce
- 6 cloves garlic
- 2 cups water
- 4 tbsp vinegar
- 2 pcs bay leaves
- 1/2 cup mayonnaise
Instructions:
- Chop pork belly into cubes.
- Combine soy sauce and garlic and mix with the pork. Allow to marinate for at least 1 hour.
- In a pot, cook the pork until slightly brown. Pour in water and remaining marinade and simmer for 30-40 minutes.
- Add vinegar and bay leaves and simmer for another 20 minutes.
- Strain pork. Continue to cook the sauce until it thickens.
- Deep fry pork until crisp.
- In a blender, combine garlic, adobo sauce, and mayonnaise.
Monggo
Ingredients:
- 1 cup monggo
- 1 large tomato, diced
- 1 red onion, thinly sliced
- 4 tbsp garlic, minced
- 1 tbsp fish sauce
- pepper to taste
- 2 pcs pork belly, thinly sliced
- 1/2 cup chicken stock
- 2 tbsp mayonnaise
- crushed chicharron, for garnish
Instructions:
- Soak monggo beans overnight.
- Thinly slice pork belly. Render the fat in a pan with some oil.
- Chop tomatoes, garlic, and onions. Once the pork is browned, combine with the aromatics.
- Season with fish sauce and black pepper to taste.
- Pour in chicken stock and allow to simmer for 5-10 minutes.
- Add mayonnaise and mix until well combined.
- Add monggo and simmer for 10 more minutes until slightly thick.
- Garnish with crushed chicharron.
Fried chicken and mayonnaise
Ingredients:
- 1/2 cup mayonnaise
- 1/2 cup flour
- 1 egg
- 1/3 cup soda water
- salt to taste
- 1 tbsp butter
- scallions, thinly sliced for garnish
Kimchi mayo dressing:
- 1 cup kimchi
- 1/2 cup mayonnaise
- 1 tbsp gochujang
- salt, to taste
Instructions:
- Combine mayonnaise, flour, egg, soda water, and salt. Consistency should be slightly thicker than pancake batter.
- Use the remaining flour to lightly coat the chicken thighs.
- Dredge chicken thighs into batter and immediately deep fry in oil. Once golden brown, set aside for 5 minutes to drain.
- Refry chicken thighs in deep fryer.
- Combine kimchi, sesame oil, salt, mayonnaise, and gochujang in a blender.
- In a pan, combine butter and kimchi mayo. Add in chicken and mix until well combined. Garnish with scallions.
